Bean & Cheese Burrito

 

Ingredients:
16oz Dry Pinto Beans
5 cups of water
2 TBS Paprika
1 Onion chopped
1 large chicken bullion cube (or 2 small cubes)
Oaxaca cheese
Flour tortillas

Instructions:
1. Soak pinto beans by heating electric skillet to 400 degrees, adding pinto beans and 2 cups of water, cover & boil for 10 minutes then let beans soak in water for an hour, then drain. 
2. Prepare pinto beans by combining soaked pinto beans, 3 cups of water, paprika, chopped onion and chicken bullion in crockpot and cook on high for four hours.
3. Next prepare your burrito mixture by heating electric skillet to 400 degrees and add cooked pinto beans, using either a spatula or potato masher begin mashing beans until there are no formed beans in the skillet and place in a bowl.
4. To prepare your burritos you will then heat the electric skillet to 200 degrees, place flour tortilla in the skillet and add 2-4 tablespoons of burrito mixture, top with Oaxaca cheese, fold burrito at all four corners and brown on each side.
5. Serve with salsa or guacamole or freeze to consume later.
