Cajun Chicken Pasta

 

Ingredients:
2 large chicken breast (diced)
1 pt. half and half
1/2 pt. grape tomatoes (halved)
1 1/2 cup frozen spinach (unthawed)
1 yellow onion (chopped)
1 TBS minced garlic
6 TBS olive oil
2 TBS creole seasoning
1 TBS paprika
2 cups Italian cheese
2 cups mozzarella cheese
8oz angel hair pasta
1 tsp black pepper
pinch of salt

Instructions:
1. Heat electric skillet to 350 degrees, add 2 TBS olive oil and tomatoes faced down, cook each side for 3-4 minutes and plate.

2. Next season chicken using 1 TBS creole seasoning and paprika, at same temperature. Heat electric skillet to 350 degrees, add 2 TBS olive oil and cook chicken until done, meaning not pink in color for about 12-15 minutes and plate.

3. Now increase electric skillet temperature to 400 degrees and cook angel hair pasta according to package instructions, you want the pasta to be soft but NOT mushy. When done, drain pasta and set aside.

4. To prepare your rue heat the electric skillet to 350 degrees, add 2 TBS olive oil and onion, sauté onions for 5 minutes and then add minced garlic and continue sauté for 2 minutes. Next add half and half, Italian cheese, mozzarella cheese  and 1 TBS creole seasoning. Whisk sauce until thickened.

5. Then add unthawed spinach to sauce with a pinch of salt & 1 tsp of pepper and stir, next add tomatoes to sauce and stir, then add pasta to sauce and stir and lastly chicken to sauce and stir. Simmer for 5 minutes and serve with Texas Toast and your favorite vegetables.
