Lemon Pepper Chicken Alfredo

 

Ingredients:
1lb chicken breast/breast tender strips
3TBS lemon pepper seasoning
1TBS black pepper
2TBS Creole seasoning
1TBS minced garlic
1/2 chopped onion/2TBS dried onion seasoning
8oz angel hair/linguini pasta
1 cup frozen spinach thawed
1/cup cooking oil
8oz half-n-half
1 cup mozzarella cheese
1TBS butter

Instructions:
1. Rinse chicken and season with lemon pepper seasoning, then heat electric skillet to 350 degrees add cooking oil and chicken. Cook chicken until no longer pink and plate.
2. Prepare pasta according to instructions and set aside.
3. Prepare alfredo sauce as follows:
a. Heat electric skillet to 350 degrees add butter and onion and sauté for 3-5 minutes, then add garlic and sauté for an additional 3 minutes
b. Reduce heat to 300 degrees add half-n-half to onion and garlic mixture and stir, then add mozzarella cheese and stir until melts
c. Reduce heat to 250 degrees and add spinach, creole seasoning and pepper
d. Reduce heat to warm add pasta and chicken, stir, simmer for 20 minutes
