Black Bean and Cheese Quesadillas
Quesadillas are one of my favorite meal options! Warm flour tortillas filled with goodness and smothered in cheese will make you feel good all over!! There are many ways to make them however what I have found is that less is actually more when it comes to these delectable delights.
Ingredients:
2 cans Black Beans
3 Tablespoons of Taco Seasoning
1 Tablespoon Minced/Dried Chopped Onion
1 cup water
Flour Tortillas
Mexican Blend Shredded Cheese
Salsa or Guacamole
Instructions:
1. Rinse black beans.
2. Combine black beans, taco seasoning, onion and water in electric skillet at 300° simmer for 12 minutes then set aside in bowl.
3. Set electric skillet at 300° and place flour tortillas, sprinkle cheese on top of tortilla and allow cheese to melt for 1-2min then add black beans to half of the tortilla and fold the other half on top.
4. Toast quesadilla on both sides and serve with salsa or guacamole or both!
