Vegetable Stir Fry Bowls
Vegetable stir fry is light on the palate and has a way of making you feel warm inside with each bite. The combination of soft and crunchy ingredients along side the sweet and savory taste makes me full just thinking about it! This recipe is not only healthy but hearty as well, your taste buds can thank me later.
Ingredients:
1 bag of dry Pinto Beans (cooked)
18oz Yellow Rice
24oz Stir Fry Vegetables
1 Chicken Bullion Cube
2 Tablespoons Minced/Dried Onion
2 Tablespoons Paprika
1 Tablespoon Olive Oil/Cooking Oil
4.5 Cups of Water
BBQ Sauce (for topping)
Pinto Bean Instructions:
1. Rinse dry beans and place in electric skillet along with 2.5 cups of water, boil at 400𝆩 for 10 minutes, then turn off heat and let beans soak for 1 hour.
2. After 1 hour soak, rinse beans and add to your crockpot along with 2 cups of water, chicken bullion cube, onion and paprika.
3. Set your crockpot temperature to High and cook for 4 hours.
Yellow Rice Instructions:
***Prepare according to the instructions on packaging, after prepared, place in bowl and set aside.
Stir Fry Vegetable Instructions:
1. Place olive oil/cooking oil into electric skillet and heat at 350𝆩, add stir fry vegetables and sauté until tender, place in bowl and set aside.
Bowl Prep:
1. Place yellow rice on the bottom layer of your bowl.
2. Top with pinto beans on next layer.
3. Top with stir fry vegetables on next layer.
4. Then top with BBQ sauce on the top layer, stir and eat!
