Beef Barbacoa


Ingredients:
2-3lbs chuck roast
1 onion dices
4oz diced green chilis
2TBS minced garlic
2TBS apple cider vinegar
3 Bay leaves
1TBS Mexican oregano
1TBS cumin
1tsp black pepper
2tsp salt
1/4 tsp ground cloves
4oz beef broth
2 ancho chilis chopped with 4oz hot water
1tsp Chyenne pepper
1tsp Mexican chili pepper
2oz lime juice

Instructions:
1. Heat electric skillet on medium to high temperature and toast ancho chilis on each side until slightly puffed. Then place puffed chilis in hot water to soak & soften for 15 minutes. Next remove seeds & stems from peppers and chop into fine pieces

2. Rinse roast an place in crock pot and combine all ingredients, cook on high for 6 hours. Then remove beef, shred and place back in crockpot to cook for an additional 2 hours
