Pesto Pasta

 

Ingredients:

  • 8oz Linguini Pasta
  • 1/2 pint Grape Tomatoes
  • 1/2 Yellow Onion
  • 3 cloves Garlic
  • 6oz Basil Pesto
  • 7 Tablespoons Olive/Cooking Oil
  • 1/2 Teaspoon Salt
  • 1 Tablespoon Pepper


Instructions:

  1. Rinse grape tomatoes and cut in half length wise, season with salt and pepper
  2. Set electric skillet temperature to 300 degrees, add 1 tablespoon of oil and place tomatoes face down
  3. Brown tomatoes for 4 minutes, turn on other side and brown for 3 minutes, remove and plate
  4. Boil linguini according to package instructions, add 1 tablespoon of oil to prevent sticking, drain and set aside
  5. Dice onion and garlic, sauté onion in electric skillet at 300 degrees with 2 tablespoons of oil for 5 minutes, then add garlic and sauté for an additional 3 minutes
  6. Next in same skillet add linguini pasta, tomatoes, pesto sauce and 2 tablespoons of oil stir to mix ingredients together and simmer at 200 degrees for 10 minutes
  7. Plate and serve with favorite vegetables and Texas Toast.
