Adobo Pork
Ingredients:
1-2lb pork butt or roast
Adobo Sauce:
-3 ancho chili peppers
-3 cups hot water
-1tsp Mexican oregano
-1tsp cumin
-1tsp Chyenne pepper
-1tsp cinnamon & sugar
-1tsp Mexican chili pepper
-1 cup of chili soak liquid
-1TBS cooking oil
-1/2 chopped onion
-2TBS minced garlic
Instructions:
1. Heat electric skillet on medium to high temperature and toast ancho chilis on each side until slightly puffed
2. Place puffed chilis in hot water to soak & soften for 15 minutes
3. Remove seeds & stems from peppers and chop into fine pieces
4. Heat electric skillet to medium temperature, add cooking oil and onion, sauté onion for 4 minutes then add garlic and sauté for an additional 3 minutes and set aside
5. Combine dry seasonings with 1 cup of chili soak liquid and stir
6. Place pork butt or roast in crockpot then add ancho chilis, onion & garlic and seasonings mixture, add additional chili soak liquid if necessary to cover pork entirely, heat crockpot on high temperature, cover and cook for 6 hours, then remove to shred and place back in crockpot to cook for an additional 2 hours
