Chicken Enchiladas
Ingredients:
1/2 whole fryer chicken
1 chicken bullion
4oz green chiles
3TBS a menudo seasoning
20oz red enchilada sauce
5 cups of water
2TBS cooking oil
1 cup Oaxaca cheese
flour tortillas
Instructions:
1. Rinse chicken and place in crockpot along with 3 cups of water and chicken bullion, cook on high for four hours. Then remove chicken, and remove skin & bones. Shred chicken.
2. Heat electric skillet to 350 degrees add chicken, 2 cups of water, a menudo seasoning and green chiles and simmer for 15-20 minutes.
3. To make enchiladas place 3-4 TBS of chicken mixture inside a flour tortilla and roll. Once all of your enchiladas are rolled then place them in electric skillet, cover with enchilada sauce. top with Oaxaca cheese and simmer on low heat for 20-30 minutes.
