Chicken Stew
Ingredients:
1/2 whole fryer chicken
1 chicken bouillon
28oz tomato sauce
14oz diced tomatoes
8oz red kidney beans cooked
1 jalapeno seeded & diced
1 onion chopped
1 TBS minced garlic
2 TBS paprika
1 TBS Creole seasoning
3 stalks celery chopped
4 cups of water
1 TBS cooking oil
1 cup chopped spinach
Instructions:
1. Rinse chicken and place in crockpot along with 4 cups of water and chicken bouillon, cook on high for four hours. Then remove chicken and remove skin & bones. Shred chicken.
2. Heat electric skillet to 350 degrees add cooking oil, onion, garlic and jalapeno sauté for 4 minutes
3. Next add diced tomatoes, celery, kidney beans, tomato sauce and seasonings and cook for 5 minutes
4. Then add spinach, shredded chicken, 3 cups of chicken broth from crockpot stir and cover; simmer for 1-2 hours
