Skillet Chicken Pot Pie
Ingredients:
1/2lb chicken breast strips diced
12oz mixed vegetables
2TBS onion seasoning
2TBS Creole seasoning
2TBS paprika seasoning
2TBS garlic & pepper seasoning
1 chicken bouillon cube
4 celery stalks chopped
10.5oz cream of chicken soup
8oz water
4oz cooking oil
2TBS butter
flour
2 uncooked pie crusts
Instructions:
1. Rinse chicken then heat electric skillet to 350 degrees add cooking oil and chicken, cook until no longer pink and set aside
2. Heat electric skillet to 350 degrees add mixed vegetables, celery and seasonings; sauté until tender then add cream of chicken soup, water and chicken bouillon; reduce temperature to warm and simmer for 30min. Next add cooked chicken to mixture and simmer for an additional 15-30 min. Then thicken mixture to desired texture with flour adding 1TBS at a time until desired consistency and set aside
3. Prepare pie crusts as follows:
a. Heat electric skillet to 200 degrees and add 1TBS of butter, lightly brown pie crust on each side
4. Prepare pot pie as follows:
a. Heat electric skillet to 200 degrees, place one pie crust on the bottom of the skillet, then add pot pie mixture and cover with 2nd pie crust
b. Reduce temperature to warm and simmer for 30 minutes
