Southern Chicken & Dumplins
Ingredients:
1/2 whole fryer chicken
8oz baby carrots
4 celery stalks chopped
2TBS cooking oil
1 onion chopped/2TBS dried onion
2 chicken bouillon cubes
1TBS garlic seasoning
1TBS Creole seasoning
1 TBS black pepper
5 cups of water
3-5 canned biscuits chopped
3TBS flour
Instructions:
1. Rinse chicken, place in crockpot with 1 chicken bouillon cube and 3 cups of water; cook on high for 4-6hrs, remove from crockpot, shred set aside and save chicken broth
2. Heat electric skillet to 350 degrees add cooking oil, carrots, celery and onion sauté for 5-7 minutes then add garlic and pepper seasonings and sauté for an additional 3 minutes
3. Then add 2 cups of water and chicken bouillon cube, reduce heat to warm and cook vegetables for an hour or until tender
4. Next add shredded chicken to vegetable mixture along with the chicken broth from crockpot, Creole seasoning and biscuit dough. Simmer stirring occasionally for 30 minutes add flour to thicken and serve
